The Fairview Darling Sauvignon Blanc 2017 is textured and complex, yet as refreshing as the cool Atlantic winds that blow across this Darling-based vineyard. Winemaker Anthony de Jager attributes this Sauvignon Blanc’s fresh minerality to the red oakleaf soils and maritime climate in which the vines are grown. But terroir isn’t the only talking point: this classic example of Sauvignon Blanc meets all expectations with aromas of tropical fruit, passionfruit and citrus on the nose, whilst fresh grapefruit flavours give way to lime undertones which contribute to the wine’s generous mid-palate and lingering crisp finish. A perfect apéritif, but also delicious with white meats including chicken and pork, seafood dishes or goat cheeses.
