The Tokara Méthode Cap Classique Blanc de Blanc is made from 100% Chardonnay grapes grown on Tokara’s Elgin property, Highlands. This bubbly has a vibrant light golden hue with a green edge and an exceptionally fine and consistent mousse. The aromas are those of lightly toasted almonds, lemon preserve and a hint of fresh green apple. The palate is a wonderful interplay between silky liquid, crystalline acidity and fine mousse. Typical flavours include freshly baked Gougère, green apple, lemon preserve with hints of celery salt that provide a zipped saline finish.
This exceptional sparkling wine was produced according to the traditional ‘Champagne’ method where the base wine spent a total of 8 months maturing before blending and being bottled for the second fermentation in November 2013. The resultant bubbly spent a further 79 months on the lees maturing before being disgorged and put under cork and wire hood in July 2020.

string(513) "Possibly the most famous grape variety in the world, Chardonnay has found a home in pretty much every corner of the wine world. From crisp, flinty Chablis styles to full-bodied, oaky, rich Napa Valley Chardonnay it is a variety which has the ability to morph according to the climate or winemaking philosophy. It also has the capacity to produce amongst the greatest white wines in the world. Some praise indeed for this chameleon variety, the likes of which may only truly be matched by Riesling or Chenin Blanc."
