The sparkling gem in the DeMorgenzon portfolio is this über-fine Method Cap Classique (MCC). Made to the Champagne method where secondary fermentation takes place in bottle, it is created from 100% estate-grown Chenin Blanc grapes. Matured on its lees for 18 months it then receives its dosage (for this component, Carl van der Merwe uses sweet Chenin Blanc juice which has been aged in French oak barriques) prior to dégorgement and release onto the market. This steely, fresh, aromatic sparkling wine is already showing autolysis and bready, buttered toast notes. Rated 90 points in the September 2019 issue of Decanter Magazine’s Blanc de Blancs Sparkling Wine Panel Tasting, this is a beautiful bubbly from the Cape!
