Description
Babylonstoren Nebukadenesar 2021 is Babylonstoren’s flagship Bordeaux blend (49% cabernet sauvignon, 25% merlot, 16% cabernet franc, 5% petit verdot, and 5% Malbec) and is set to be a classic. All the wines were made separately and matured in new French oak barrels for 23 months. Then the blend was made up and left in a tank for a month (to marry) before being bottled and matured for five months prior to release.
On the nose an intriguing fragrance of violets and thyme with intense blackcurrant and underlying cigar-box. Superbly crafted with a good balance of vibrant multi-layered dark red fruits supported by tight, well-honed tannins. Opulent yet sophisticated with a long, compelling finish.
Serving Temperature: Room temperature, 16–18°C (60–64°F).
Ageing potential: Deceptively easy to drink now but will grow in stature and complexity over the next ten years.
Food pairing: A wine to star at the table where the food should play the supporting role – rare roast beef or kudu fillet with a red wine sauce, roast lamb with rosemary, rare roast beef, fillet on the bone or venison carpaccio with shaved parmesan.
Alcohol: 14.5% ABV
