The Nest Egg range is created only in outstanding vintages and represents the very best Bird in Hand has to offer with limited quantities available.
Grapes were handpicked in the early morning from the Bird in Hand Estate vineyard at Woodside and a premium site in Mount Torrens; nestled at around 500m elevation. Whole bunch pressed directly to French oak barrels, the fruit underwent a wild ferment, before being stirred weekly to promote natural malolactic fermentation and create texture and flavour. Batches spent 9 months on their yeast lees in barrel prior to blending. Every Chardonnay barrel was then blind tasted and graded by the winemaking team. Larger format oak featured significantly in the final blend.
A collection of 4320 individually numbered bottles, 2021 Nest Egg Chardonnay, is a very concentrated and compelling release. Nectarine, yellow peach and citrus blossom work harmoniously with hazelnut, vanilla bean and subtle struck match reduction. The palate is richly textured with powerful stone fruit, pink grapefruit and honey suckle along with lively acidity giving length and freshness to the wine. A delicate and elegant vintage with subtle complexity.
