About this wine

Bird in Hand Cabernet Sauvignon 2021 is deep in colour with red and purple hues, on the nose this wine is perfumed of violet, blackcurrant, and dried tobacco aromas with subtle spiced, coffee oak nuances.  On the palate, this Cabernet Sauvignon is bright, with fleshy blackberry and cranberry fruit, supple tannins, sweet fennel spice and great length.

The Cabernet Sauvignon grapes for this wine were sourced from two exceptional vineyards located in Adelaide Hills and Coonawarra.  All parcels of grapes are kept separate from harvesting through to final blending. The 2021 Bird in Hand Cabernet was aged in tight grained new and seasoned French Oak Barriques for 18 months.  Every Cabernet barrel is sampled and analysed by the winemaking team who look for fruit complexity, colour, tannin structure and acidity to put together the best possible blend.

Ageing potential:  The wine will cellar for several years.

Food pairing: A great match for braised lamb or beef with roasted shallots or osso bucco with truffled polenta.

Alcohol:13.7% ABV
