Bird in Hand Sauvignon Blanc 2024 shows lifted, fresh and punchy flavours and aromas, underpinned with classic varietal notes of passionfruit, guava, grapefruit and faint snow pea. Fresh and delicate, with a textured mid-palate that finishes dry, with lively citrus acidity and light chalkiness. Slightly textured on the mid-palate, it has a dry finish, with subtle citrus acidity.
Predominantly fruit was sourced from high altitude and cool subregions of the Adelaide Hills, including Lenswood, Balhannah, Oakbank, Woodside and Charleston to produce a premium quality, classic Adelaide Hills sauvignon blanc.
Grapes were gently crushed and de-stemmed and immediately chilled to ensure the fruit was cold before being pressed to tank where only the purest free run juice underwent cold settling for 2-7 days. This Sauvignon Blanc shows intense aromas of fresh lime juice, white flowers, lemongrass, candied citrus and nectarines. The palate is concentrated and dense with fruit, yet lively thanks to the high acidity. Zesty citrus, stone fruit, herbs and floral flavours fill the palate along with a fine chalky mineral texture that focuses the finish.

Food pairing: Enjoy as an aperitif or paired with seafood such as oily grilled fish or chargrilled squid and fresh prawns.
